At the heart of Kylemore’s kitchen, Head Chef John O’Toole and his team begin each dish with a simple belief: that great food starts long before it reaches the plate. From nearby fields and coastal waters, ingredients are carefully sourced with respect for their origin, each one carrying a story from farm to fork. Here, the richness of Irish cuisine is not just celebrated, but lovingly brought to life, capturing the essence of the land, the seasons, and the people who shape it.
Connemara Fisheries
From the nearby village of Corr na Móna, Connemara Fisheries supplies Kylemore Abbey with beautifully crafted smoked salmon, prepared using time honoured methods. Each salmon is carefully cured by hand before being traditionally smoked over oak and beech wood, allowing the rich, delicate flavour to develop slowly and naturally.
Every slice reflects a deep commitment to craft and detail, resulting in a consistently refined taste. For over a decade, Michael Holmes and his team have proudly partnered with Kylemore, building a trusted relationship grounded in shared values of quality, heritage and skill.
Moran’s Meats
Based in nearby Clifden, Moran's Meats has been a valued local supplier to Kylemore Abbey for over a decade. Renowned for their quality and care, they provide locally sourced meats including tender Connemara lamb and traditional Irish bacon, drawn from farms across the region.
This close partnership ensures not only exceptional freshness and full traceability but also supports local producers and celebrates the rich agricultural heritage of Connemara. Each cut is thoughtfully selected, enabling our chefs to create dishes that honour the authentic flavours of the West of Ireland.
The Victorian Walled Garden
The Victorian Walled Garden at Kylemore Abbey is a place of quiet beauty and gentle productivity, where heritage and nature exist in perfect harmony. Divided between a formal flower garden and a working vegetable garden, it offers a glimpse into a rich horticultural tradition that continues to flourish today.
As a carefully tended display garden, the Vegetable Garden produces in small and seasonal quantities for the Kylemore Kitchen. While it does not supply the café on a full time basis, the herbs and vegetables grown here are harvested in limited batches and used thoughtfully, adding a fresh, local character to selected dishes when available.
Our dedicated Garden team also creates the floral arrangements found throughout Kylemore. Using blooms grown within the six-acre walled garden, they craft seasonal displays that reflect the colour, fragrance and ever-changing beauty of the estate, connecting each space to the landscape beyond.
