I will take the cup of salvation, and call on the name of the Lord. (Psalm 115)
The Gospel of Mark, the earliest written Gospel, is believed to be  Peter's memories faithfully recorded by, 'my son Mark'.(1 Peter 5,13) Thus, we can follow very intimately the institution of Jesus' last and greatest gift to us before his death. The gift is no less than Jesus' very self, his Body and Blood, real and present. This great Sacrament is what has sustained catholic Christians down through the ages, generation by generation. It has many names: Bread of Angels, The Blessed Sacrament, Bread of the strong, Pledge of Eternal Life...
One thing is certain and that is Flannery O'Connor's response when it was stated that the Eucharist was a symbol: "To hell with symbols!"
With Thomas Aquinas we pray, O hidden Godhead, humbly I adore Thee, who truly art beneath the form before me... (Adoro Te).
